So it finally happened. Our neighbors are buying eggs as fast as the hens can lay them. In fact, one day last week when we had no more eggs to put in the roadside stand, a neighbor carried an egg carton down to the hen house so my wife could fill it with eggs fresh from the nest boxes.
Eggs don’t come fresher than that.
We have plans in the works to expand our egg operation this summer. Hopefully by September we’ll all be enjoying fresh eggs from the new members of our flock. Stay tuned for updates and photographs as the expansion gets underway.
